Is there a good rule of thumb for the amount of mash water you use per grain load. e.g. If i have 5 kg of grains do I use 15 litres of water? And then how much sparge water should I use?

3-4L per KG is a normal mash ratio. The 10 Gal system I try to keep the sparge water (fly sparge) at about 35L to give the grain a proper rinse thru. Thats the simplest answer I can give without going into pros/ cons and chemistry.
